Every plan moves sold-out products to the bottom of a collection, and every plan can hide them from that collection instead. Those two are never taken away. What changes between plans is how many collections Aisle looks after, how often it checks them, which ordering rules you can pick, and how much run history you can see.

Best stocked first is the only ordering rule you need Pro for.
Free covers one collection, checked once a day, with no ordering rule — Then order the rest by offers only Leave the order alone, which keeps the order the collection already had. Sold-out products still go to the bottom, or come out of the collection if you choose hiding.
On Free, adding a second collection shows "You are using every collection your plan includes" with Change plan to sort more.
If you move to a smaller plan
Nothing is deleted.
Collections over your new limit are paused. They stay in your list, marked "Paused by your plan", with the line "This one is paused, not deleted — upgrade and it starts again." Their settings are kept. Move back up and they start sorting again where they left off.
Ordering rules your new plan does not include stop being applied. Move sold-out products to the bottom and Hide sold-out products instead keep working exactly as before, so sold-out products stay out of the way.
If a collection was set to check more often than your new plan allows, it checks at the fastest schedule that plan does allow.
Changing plan
On the Collections page, find Plan and press Change plan. That opens Shopify's own plan page, where you can move up or down yourself. You do not need to contact anyone, and you do not need to remove your collections first.
A new plan applies to your next run. Press Run now on a collection if you want it sorted straight away.
Changing plan is not the same as uninstalling. Nothing is put back and nothing is deleted when you move between plans — but before you uninstall, press Turn Aisle off first. Shopify removes Aisle's access the moment you uninstall, so after that it can no longer change your collections back.
